Description

Tartufo is a traditional Italian dessert that combines the creamy richness of gelato with the indulgence of a chocolate coating, making it a luxurious yet simple treat. This frozen dessert features an inner core of chocolate gelato surrounded by a layer of vanilla, all encased in a crisp chocolate shell and dusted with cocoa powder. With every bite, you get a wonderful contrast between the rich, creamy gelato and the slightly bitter cocoa coating. Perfect for summer days or any time you crave a unique frozen treat, tartufo is sure to impress at any gathering. This recipe also allows for creativity: you can switch out the flavors of gelato to personalize each tartufo and even add a sprinkle of nuts for added texture. The tartufo offers a wonderful, rich flavor profile that captures the essence of Italian desserts and satisfies the chocolate lover’s dream.

Ingredients

Units Scale
  • 1 pint chocolate gelato or ice cream
  • 1 pint vanilla gelato or ice cream
  • 1/2 cup finely chopped dark chocolate
  • 1/2 cup cocoa powder, for rolling
  • 1/4 cup finely chopped hazelnuts or almonds (optional, for garnish)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Line a baking sheet with parchment paper. Scoop out 4-5 large balls from the chocolate gelato and place them on the prepared sheet. Freeze until firm, about 1 hour.
  2. Scoop a small portion of the vanilla gelato and flatten it slightly in your hand. Place the chocolate gelato ball in the center and wrap the vanilla gelato around it, forming a larger ball. Smooth out any seams.
  3. Freeze the formed gelato balls until solid, around 2 hours.
  4. Melt the dark chocolate over a double boiler, stirring until smooth. Allow it to cool slightly.
  5. Roll each tartufo ball in the melted chocolate, coating it entirely, and immediately roll in cocoa powder until evenly coated.
  6. Return the tartufo balls to the freezer until the chocolate sets, about 30 minutes.
  7. Serve cold, garnished with chopped hazelnuts, almonds, or fresh mint leaves if desired.
