  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 3 large potatoes, peeled and cubed
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 cup frozen peas (optional)

Instructions

  1. In a large bowl, toss the beef cubes with flour, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Brown the beef in batches, then transfer to the slow cooker.
  3. In the same skillet, sauté onion and garlic until translucent. Add to the slow cooker.
  4. Add carrots, potatoes, celery, broth, tomato paste, Worcestershire sauce, thyme, and bay leaves to the slow cooker. Stir to combine.
  5. Cover and cook on low for 8-10 hours or high for 4-5 hours.
  6. Stir in peas during the last 30 minutes (optional). Remove bay leaves before serving.
  7. Adjust seasoning if needed and serve hot with crusty bread or over rice.
