Ingredients

  • 4 salmon fillets
  • 1 pound baby potatoes, halved
  • 1 pound broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon everything bagel seasoning
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange the potatoes, broccoli, and bell peppers on a sheet pan. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  3. Roast the vegetables for 15 minutes.
  4. Remove the sheet pan from the oven and place the salmon fillets on top of the vegetables. Sprinkle the salmon with everything bagel seasoning and garlic.
  5. Add lemon slices over the salmon and vegetables.
  6. Return the sheet pan to the oven and bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve immediately, garnished with extra lemon wedges if desired.
