Ingredients
- 4 salmon fillets
- 1 pound baby potatoes, halved
- 1 pound broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 tablespoons olive oil
- 1 tablespoon everything bagel seasoning
- 2 cloves garlic, minced
- 1 lemon, sliced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Arrange the potatoes, broccoli, and bell peppers on a sheet pan. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
- Roast the vegetables for 15 minutes.
- Remove the sheet pan from the oven and place the salmon fillets on top of the vegetables. Sprinkle the salmon with everything bagel seasoning and garlic.
- Add lemon slices over the salmon and vegetables.
- Return the sheet pan to the oven and bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
