  • 4 slices of sourdough bread
  • 2 tablespoons of pesto sauce (store-bought or homemade)
  • 4 slices of mozzarella cheese
  • 4 slices of cheddar cheese
  • 2 tablespoons of softened butter

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread a thin layer of butter on one side of each slice of bread.
  3. Spread a tablespoon of pesto on the unbuttered side of two slices of bread.
  4. Place a slice of mozzarella and a slice of cheddar on top of the pesto on each of the two slices.
  5. Top with the remaining bread slices, buttered side out.
  6. Place the sandwiches in the preheated skillet.
  7. Cook for 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.
  8. Slice in half and serve warm.
