Ingredients

  • 1 package grape or berry-flavored gelatin
  • 1 cup hot water
  • 1/2 cup cold water
  • 1/2 cup vodka
  • 1 can lychee fruit in syrup (drained)
  • 1 small handful blueberries

Instructions

  1. In a mixing bowl, dissolve the gelatin in 1 cup of hot water, stirring until completely dissolved.
  2. Add 1/2 cup of cold water and 1/2 cup of vodka to the bowl, stirring to combine.
  3. Place a single blueberry inside each lychee to create an “eyeball.”
  4. Position the lychee “eyeballs” in the wells of a muffin tin or small silicone mold.
  5. Pour the gelatin mixture over the lychees, covering them, and then refrigerate until firm (about 2-3 hours).
  6. Carefully remove each “eyeball” shot from the mold and serve chilled.
