Ingredients
- 1 package grape or berry-flavored gelatin
- 1 cup hot water
- 1/2 cup cold water
- 1/2 cup vodka
- 1 can lychee fruit in syrup (drained)
- 1 small handful blueberries
Instructions
- In a mixing bowl, dissolve the gelatin in 1 cup of hot water, stirring until completely dissolved.
- Add 1/2 cup of cold water and 1/2 cup of vodka to the bowl, stirring to combine.
- Place a single blueberry inside each lychee to create an “eyeball.”
- Position the lychee “eyeballs” in the wells of a muffin tin or small silicone mold.
- Pour the gelatin mixture over the lychees, covering them, and then refrigerate until firm (about 2-3 hours).
- Carefully remove each “eyeball” shot from the mold and serve chilled.
