Ingredients
- 1.5–2 lbs boneless, skinless chicken breasts
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups chicken broth
- 2 cans (4 oz each) diced green chilies
- 1 cup corn (frozen or drained canned corn)
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tsp cumin
- 1 tsp chili powder
- 1 tsp dried oregano
- 1 tsp ground coriander
- Salt and pepper to taste
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- Juice of 1 lime (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Place chicken breasts in the crockpot. Add white beans, diced green chilies, corn, chopped onion, minced garlic, cumin, chili powder, oregano, coriander, salt, and pepper.
- Pour the chicken broth over the ingredients in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and can be easily shredded with a fork.
- Remove the chicken, shred it, and return it to the crockpot.
- Stir in the softened cream cheese until melted and fully incorporated, then add sour cream and lime juice if desired.
