Ingredients
- 1 large butternut squash, peeled and cubed
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 1 egg
- 12 lasagna noodles
- 2 cups marinara sauce
- 1/2 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Toss the butternut squash cubes with olive oil, salt, and pepper. Spread them on the prepared baking sheet and roast for 25-30 minutes, or until soft.
- Once roasted, mash the butternut squash in a bowl until smooth.
- In a separate bowl, combine the ricotta, Parmesan, chopped spinach, and egg. Mix until well-blended, then fold in the mashed squash.
- Cook lasagna noodles according to package instructions, drain, and let cool slightly.
- Spread 2 tbsp of the butternut squash mixture on each noodle, then roll up and place seam-side down in a baking dish.
- Pour marinara sauce over the roll-ups and sprinkle with shredded mozzarella.
- Cover with foil and bake for 20 minutes. Remove the foil and bake an additional 10 minutes until the cheese is bubbly and golden.
- Garnish with fresh basil and serve warm.
