  • 1 large butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 1 egg
  • 12 lasagna noodles
  • 2 cups marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Toss the butternut squash cubes with olive oil, salt, and pepper. Spread them on the prepared baking sheet and roast for 25-30 minutes, or until soft.
  3. Once roasted, mash the butternut squash in a bowl until smooth.
  4. In a separate bowl, combine the ricotta, Parmesan, chopped spinach, and egg. Mix until well-blended, then fold in the mashed squash.
  5. Cook lasagna noodles according to package instructions, drain, and let cool slightly.
  6. Spread 2 tbsp of the butternut squash mixture on each noodle, then roll up and place seam-side down in a baking dish.
  7. Pour marinara sauce over the roll-ups and sprinkle with shredded mozzarella.
  8. Cover with foil and bake for 20 minutes. Remove the foil and bake an additional 10 minutes until the cheese is bubbly and golden.
  9. Garnish with fresh basil and serve warm.
