- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound ground turkey
- 1 bell pepper, chopped
- 2 cups butternut squash, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until fragrant and softened, about 3 minutes.
- Add ground turkey to the pot, cooking until browned and breaking it up as it cooks, approximately 5-7 minutes.
- Add bell pepper, butternut squash, black beans, diced tomatoes, and chicken broth to the pot.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 20-25 minutes, or until the butternut squash is tender.
