Ingredients

  • 1 seedless watermelon
  • 2 cups strawberries, hulled and sliced
  • 1 cantaloupe, seeded, peeled, and sliced (optional)
  • 1 fresh pineapple, peeled, cored, and sliced (optional)

Instructions

  1. Cut three large, crossways slices of watermelon, each 1 to 2 inches thick. Trim the rind to create the “cake” layers, with the largest slice as the base on a cake plate.
  2. Alternate layers of sliced strawberries, cantaloupe, and pineapple atop the base, followed by the second-largest slice of watermelon. Repeat to form a multi-layered fruit stack resembling a cake.
  3. For decoration, cut remaining fruit slices into fun shapes using cookie cutters or a knife. Arrange the decorative fruit shapes and berries on the “cake” tiers.
  4. Chill in the refrigerator until ready to serve. Slice the cake like a traditional cake, cutting one wedge at a time.
